First time I have ever used a slow cooker &
I absolutely love it. Who knew you could throw everything
in a pot for hours, have the house filled with wonderful smells & the taste
be so yummy! My husband & I are considering making every Sunday,
‘Crock Pot Sunday’.
We did learn a valuable lesson! Don’t start the temperature out
on high!! This can cause the meat to dry out. Luckily there is quite a bite
of juice to baste over the top to prevent this from happening.

I just can’t believe how tender the roast beef was. AMAZING!
Ingredients
1 onion, divided & sliced
2 cloves garlic, minced
2 stalks celery, chopped
coarse salt
fresh ground black pepper
1/2 cup bacon bits
2 – 2 1/2 lb roast
Rinse roast. Sprinkle with salt & pepper.
In blender grind 1/2 onion, garlic, celery and bacon together.
Rub ground mixture into roast. Place remaining 1/2 onion in slow cooker.
Place roast on top of onion. Cover. Cook on low for 6-8 hours.
Serve with a fresh salad or veggie.
