This salad is so good, so full of flavor & so quick to make, you’re going to love it.
My favorite part is the raspberry walnut vinaigrette mixed with the mandarin oranges.
The taste is unbelievable!!
2 chicken breast (this is enough for 3 salads)
1/2 bag of salad
1/2 cup dried, sweetened cranberries
1/2 cup pecan halves
1/2 cup green onion, finely chopped
1/2 can mandarin oranges, drained
raspberry walnut vinaigrette
Wash & dry the salad.
Chop the green onions & drain oranges.
Wash & dry the chicken breast. If any fat on the chicken, remove.
Season both sides of the chicken with a little basil, parsley, garlic salt & thyme.
Heat oil in pan on medium to high heat. Make sure to place chicken skin side down first.
Once chicken is fully cooked, shred into bite size pieces.
Add a little raspberry walnut vinaigrette to your salad & mix.
This will give your salad a nice coating of vinaigrette without pouring it directly on top.
Next fill each bowl with salad, cranberries, pecans, green onions, oranges, chicken & fetta cheese.
