Apricot Pork Tenderloin

I had previously posted a pork tenderloin recipe that is oh so delicious, but

this recipe definitely slides into first place.

There weren’t any left overs if that tells you anything. My family devoured it.

This recipe came from e-meals & like most recipes we have tried,

it was fantastic.   If you have never heard of e-meals, please check them out.

Makes menu planning a thousand times easier & it’s great if you’re on a budget.

Fresh zucchini & squash sauteed with a little salt & pepper.


24 oz pork tenderloin

1/4 tsp salt

3 cloves garlic

1 tbs each water & soy sauce

1 tsp sesame oil

1 tsp ground ginger

1/2 cup sugar free apricot preserves

Preheat oven to 425 degrees. Place pork on a lightly greased foil lined

roasting pan or cookie sheet. Sprinkle tenderloin with salt.

Combine garlic, water, soy sauce, ginger, sesame oil & preserves.

Spread over pork. Bake about 20 to 25 minutes making sure the cooking

thermometer reads 155 to 160 from center of pork. Anything lower than 155

needs to be baked longer!! Let stand for 10 minutes before serving.

Serve with fresh zucchini & squash sauteed with a little salt & pepper.
